Christmas Appetizers #1- The mini stuffed bell peppers with goat cheese, balsamic glaze finish

This week, I am starting for you my friends, a serie of Delicious appetizers to serve at your Christmas table , holidays parties, or any party your are planning with friends. The are splendid  Stuzzicchini sfiziosi  or  Petit Hors d’oeuvres  as we say in Italy or France. So tasteful quick , full of color delights, easy to make ahead,  one of the best Party Appetizers I know!

These small peppers are available at your local supermarket, and can  be prepared with different stuffings like ricotta, rice, ground beef mixture  or Philadelphia. My favorite stuffing is a fresh goat cheese that brings an incredible salty contrast to the peppers sweetness with a secret final touch.

Let’s do it..!

Ingredients: Serves 25 

  • 25 mini sweet bell peppers
  • 2/3 of cup to 1+1/2 cup of fresh herbed goat cheese
  • 2 tablespoons of milk
  • 2 tablespoons of olive oil + 2 for the baking sheet
  • 1 teaspoon of cumin
  • salt and pepper
  • good quality of Italian balsamic vinegar or balsamic glaze.

Pre-heat the oven at 350°F, placing the rack in the center. Line a baking sheet with parchment paper and oil slightly with a brush.

In bowl, add half of herbed goat cheese, if too crumbled, soften with a tablespoon or two of milk, add half cumin, and a good pinch of salt and pepper.

Working in batches, wash bell peppers, pat dry well, gently slice them length wise, from the stem to the tip, making sure you keep the stem. Remove all seeds (there are some few). Open them book with a small spoon stuff each one well with  the goat cheese mixture. Quickly brush each one with olive oil. Set aside first batch. Repeat with remaining bell peppers.

Place the baking sheets in the oven and bake for 12 to 15 /18 minutes till mini bell peppers are soft, but still slightly firm and goat cheese is melting nicely.

This  is the final nice touch : Before serving, drop from the bottle, some good drops of a good quality Italian balsamic vinegar. Here I used a cherry balsamic glaze, and serve on a bed of lettuce leaves and garnish with parsley.
