Everybody knows Bruschetta, a delicious all times Italian antipasto (appetizer).  Two  delightful easy variations here bringing in summery Mediterranean flavors at your Holidays table, great starters for parties, snacks for drinks, or just summer cravings in December……anything goes for bruschetta!

The gorgonzola bruschetta is elegant mild and cheesy but crunchy, the mozzarella, tomato, green olives tapenade bruschetta tastes like small pizza bites out of Naples. A guests pleaser for sure.

Ingredients: yelds 25/30 toasts

  • 2 whole wheat baguettes, sliced 1/2 inch thick
  • 1/4 cup extra virgin olives oil
  • 2 large peeled garlic gloves
  • 6 to 8 oz mild gorgonzola
  • 1 mozzarella (round package)
  • 6 medium plum tomatoes
  • salt and pepper to taste

How to make it:

  • Preheat the oven t0 350 – 375F.
  • Cut tomatos in small cubes, drizzle with olive oil, salt and pepper. Refrigerate for few minutes.
  • Remove
  • Place sliced baguette on baking sheet – slightly  rub with garlic glove.
  • Adjust gorgonzola cheese small pieces, some tomatoes cubes, cover with thin slices of mozzarella,
  • Drizzle with olive oil, bake till cheese melt and bread is golden brown about 3-5 minutes.
  • Serve warm on fresh leaves salad, drizzled with vinaigrette.

Bruschetta, mozzarella,onions, tomato, tapenade.

Ingedients: yelds 25/30

  • 1/4 cup chopped onions
  • 1 mozzarella (round package)
  • 6 to 8 round plum tomatoes
  • 1 green olives tapenade small jar
  • balsamic glaze or balsamic vinegar at your choice
  • salt and pepper
  • Proceed steps 1, 2 and 3 as above, adding chopped onions to tomatoes mixture.
  • Rub well garlic gloves over bread slices
  • Adjust cubed tomatoes, mozzarella, sprinkle slightly with olive oil, bake.
  • Remove from oven, drop 1 small dollop (about 1/4 teaspoon) on each toast, sprinkle with a good balsamic fruity glaze, or good quality balsamic vinegar. Serve immediately
