One of the best healthy tasty dinners I know, full of amazing flavors, made in flash!
This recipe (from Country Living) has become one of my quick and tasty dinner staples. Very quick, not expensive, made with few ingredients you can serve, in less than 30 minutes, a very savory dinner, around 550 calories per portion… how good that can be?
Irresistible right? you do not have to count (calories) you do not to worry for a great taste (full taste there) or cooking difficulties… One more thing the same recipe is very good with chicken breasts, but I definitely prefer the salmon as it brings an unbeatable softness to the all dish. Let’s do it…
Ingredients: serves 4
- 4 salmon (here Pacific coho) fillets with skin on
- 1/3 to 1/2 a cup Orange marmelade or Apricot preserve.
- 2 to 3 teaspoons chili sauce, avoid barbecue or smoke flavors
- 1 15 1/4 oz s can sliced peaches in syrup
- 2 to 3 cups of rice
- salt and pepper
- 2 green onions chopped
- 1 teaspoon grated ginger
- 1 tablespoon unsalted butter
- broccoli florets, as you like
- handful chopped cilantro
How you make it:
Boil rice as usual, while grilling the salmon, when rice is done set aside and keep warm in large bowl.
Heat over medium heat an indoor grill, sprayed lightly with canola oil. Start the green onions slowly without burning, about 4 minutes, remove from heat and mix them to the rice, add butter, salt and pepper, stirring well, keep warm.
In microwave dish, microwave orange preserve about 15 seconds, then add to the liquid preserve the hot/chili sauce. mix well. Make it hot enough for your taste, set aside about 2/3 of your sauce, keep about 1/3 just enough for the salmon fillets.
Salt quickly the fillets then brush them with the glaze. Grill them over medium heat, first with skin side down about 8 minutes, when the chair starts to change color to half of the fillet, flip them and grill for 3 minutes, checking not to over burn.
Prepare broccoli florets at your taste then it is time to assemble our dish.
To assemble each dish, spoon over each plate, 2 tablespoons of onions buttery rice, sprinkled with grated ginger, add 1 or 2 broccoli florets, the glazed salmon fillets, garnish with few sliced peaches, chopped cilantro, and serve with more glaze in bowl to share
Voilà ! Incredible fusion of flavors!
