Just a nod to one of the last Carnival delicacies.
Semplicemente Deliziose!!

Ingredients: about 30 fritters

  • 4 medium to large apples, Granny Smith, Golden, Delicious at your like, cut in 1/4 inch thick slices
  • 6 to 8 tablespoons sugar
  • 1 1/2 cup all purpose flous
  • 1/2 teaspoons salt
  • 1/2 cup + 2 tablespoons milk
  • 2 eggs
  • 1 cup or more Rhum
  • Vegetable oil for frying

How to make it:

  • Slice apples 1/4 thick, place them in large dish, drizzle rum, add 3 tablespoons sugar, coat each side well, then let it sit at room temperature for 1 hour, covered with loose foil or parchement paper.
  • In a large bowl combine together flour, remaining 3 tablespoons of sugar, salt, add milk and eggs. Whisk well to combine.
  • When apples are done, fill a thick heavy pot with oil (it should come up 2 inches on the sides). Heat oil till bubbling point, about 375 degrees at a candy thermometer.
  • Working in batches, place batter bowl very close to the oil pan, dip apples, shake off excess, then fry till fritters are well golden, turning once, about 1 minutes or 2.
  • Now transfer apples fritters to a paper towel do drain fritters from oil excess well. Dust with sugar, serve warm with a coffee, cappuccino, champagne… at your wishes!! It will disappear quickly!!
