Steamed, pan fried, sauté or drizzled, Asparagus always make a wonderful elegant fresh first course. Choose thick asparagus for this recipe.

Easy to prepare in the oven at high temperature, your asparagus will be tender but crunchy, topped with a delicious nutty salty crust.

Ingredients: Serves 6

  • 2 pounds asparagus trimmed
  • 1 +1/2 tablespoon olive oil
  • 1/2  cup pistachio
  • 1/2 cup grated parmesan
  • coarse sale- fresh ground pepper

How to make it:

  • Preheat the oven to 400F.
  • Arrange asparagus on a lined baking sheet, drizzle with olive oil and coarse salt. Roll them with clean hands to coat. Season with pepper.
  • While asparagus are roasting,crush pistachio. Set aside
  • Place baking sheet in center oven, bake for 10-12 minutes.Remove  from oven, top asparagus with pistachio and grated parmesan.
  • Back to the oven for 5 minutes more.
  • Serve warm if possible with a teaspoon of sauce mousseline on the side!  Trés Francais!!!


Sauce Mousseline

  • 5 egg yolks, or 3  from large eggs
  • 3.5 oz  unsalted butter, melted
  • 4 tablespoons water
  • 1 1/2 teaspoons fresh lemon juice
  • Salt, to taste
  • 1/2 cup whipped cream

How to make it:

  • Over very low heat, or  in a bowl over boiling water, whisk egg yolks and water, add lemon juice salt and pepper  whisk tillyou have a very smooth mix.
  • Add butter and cream , continue whisking till all  very well combined and smooth.
  • Remove from heat adjust salt and pepper, transfer to a bowl, cover with plastic wrap, keep refrigerated till before serving.
