Finally! I have set my mind to a good diet conscious salad, this time. I thought why not with tuna as it says only 60 calories per serving! After a lavishing Easter meal it was really necessary… I remembered this recipe, a fresh spicy salad, read in a magazine, but which one?? I have tons of magazines with recipes…
I suspect many foodies, home cooks, and food bloggers are like me. We read a great recipe in a magazine, waiting at dentist lounge… or somewhere else, then trying to remember the basic of it, making some imperfect quick notes on the cell phone, finally getting totally confused when preparing it!
So I dropped the notes, and decided to do it on my own. Fresh, a touch of spices, a good hint of lemon for the proteinic tuna, not to be missed!!
It felt so great afterwards, I have been good for a day!!………
Ingredients: Serves 4
- 1 + 1/2 cup fresh baby spinach (180 gr.)
- 1+ 1/2 watercress, trimmed (180gr.)
- 1/2 red onion, thinly chopped
- 2+ 1/2 strawberries (500 gr.)
- 0.6 oz good quality tuna in spring water (170 g.)
- 1/2 cup (or a little more) crumbled feta
- 3 tablespoons olive oil
- 1 + 1/2 tablespoon lemon juice
- 1 teaspoon paprika
- good pinch cardamon
- salt and fresh ground pepper
Prep time: 20 minutes
How to make it:
Prepare tuna, peel and chop onion very thin, Wash and hull strawberries, pat them dry, cut in half or slice.
In a bowl, whisk in olive oil, lemon, spices, salt and pepper. Add half dressing to the serving salad bowl, then the tuna. Mix quickly, add watercress, spinach, onion, strawberries, then top with remaining dressing and toss lightly. Season with salt and pepper. Top with feta crumbles and serve!!
Note: This salad is outstanding without tuna!! Replace the lemon juice with 3 tbsp balsamic vinegar. Even more zesty and spicy. Delicious!
