A ‘green’ recipe slightly spicy, satisfying all appetites, a quick tour in the kitchen and it’s on the table!

Ingredients: Serves 4 to 5 burgers

  • 1 pound of good quality preferably organic ground white meat chicken
  • 1/2 cup finely chopped green onions
  • 1/3 cup of green/black pitted olives finely finely chopped
  • 1/2 cup finely chopped parsley
  • 2 to 3 Tbsp Tabasco or less if you like it mild
  • 1/2  cucumber sliced thin
  • 2 medium fresh, washed, pat dried tomatoes sliced thin
  • 1+ 1/4 cup reduced fat olive oil mayonnaise
  • 1/3 cup or more sun dried tomatoes finely chopped
  • 2 tablespoon lemon
  • 1 teaspoon paprika
  • 3 tablespoons olive oil
  • 2 cups fine breadcrumbs
  • 4 to 5 multi grains rolls or buns
  • 1/2 cup or more grated Monterrey Jack or any sharp grated cheese

How you make it:

  • For this recipe make sure to use good quality ingredients, ask your grocery store butcher to grind some chicken breasts for you.
  • Mince thin olives, green onions, and parsley. Chop sun dried tomatoes thin. Prepare bread crumbs in a shallow dish.
  • In medium bowl add mayonnaise, half of sun dried tomatoes, mix well, sprinkle paprika.
  • In large bowl, add ground chicken, olives, onions, tabasco, parsley, lemon, the remaining sun dried tomatoes, salt and pepper. Mix well with a spatula.
  • With very clean hands, start shaping the patties. Heat olive oil on a medium skillet over medium heat, fry the patties till golden brown about 5 to 7 minutes on each side. Chicken should be really cooked thru, make sure that  when pressed in the center the juices runs clear.
  • While chicken is cooking, prepare your buns, spread mayonnaise on each side, placing fresh tomatoes slices on one side, cucumber slices on the other side, then when patties are ready add, one burger, top  it with Monterrey Jack cheese, then top with the other half bun,and serve immediately!
