Paris is still a dream, it is still the wonderful romantic city I fell in love with a long time ago.
However, back then after living in the city for many years, a very slowly tiredness came through… The traffic was and still is really difficult everywhere at any time, the Champs Elysees at 2am is like Los Angeles at 8 am!! Going back and forth to work with the metro, every day packed in like sardines, many strikes and attitudes.. Assez I thought, enough, I got out to enjoy a more peaceful life in a bucolic country side of France.
In all this frantic times, I never got tired of French cuisine or Paris’ beauty. Once in the States, oh surprise… I started to miss Parisian city life again. How can you not love, strolling ancient streets, browsing fantastic boutiques and stores… entering for a visit in historic museums, literaires shops, or stopping for short breaks at the shady cafe’ terraces, just watching people passing by, while enjoying a French sundae. Un Cafe’ Liegiois.
The name comes from the city of Liege, Belgium, the recipe has been adopted by all cafes in Paris. This very Parisian delight is served in two classic versions Chocolat Liegieos and Cafè Liegiois, for your pleasure.
You see the difference and believe me both are just incredible, a burst of flavors, soft and crunchy, white clouds of cream Chantilly over a cold dark chocolate or coffee ice cream with almonds… so wonderful, you have to come and try…
In a high glass, add 2 good sizes of extra dark chocolate ice cream scoops, probably 70% of cocoa, fill the remaining part with a very good quality Chantilly cream, the house made if possible, like in Paris. Add a good handful of roasted almonds, and a swirl of chocolate sauce. Nothing else but everything. Simply amazing.
